It Ain’t Easy Being Green

Kermit the Frog was very right. Little is more intimidating than a drink that looks like pond scum, however, i am a smoothie-fanatic and it has made my diet heavy on fruit and light on veggies. I spent the better part of the week-end scouring the internet for vegetable smoothie ideas. I made this one at 11am this morning and it was awesome. Enjoy.

Ingredients:
1 frozen banana (i buy bananas that are over-ripe and chuck them directly into the freezer - run one under hot water for about a minute to peel it and then cut into chunks. No ice needed to make the smoothie thick!)
3/4 cup of apple juice (grape juice would probably work too)
large handful of spinach, chopped
half a cucumber, chopped
2 tbsp whey isolate (optional)

Blend cucumber into juice first. Then add banana. Then spinach and whey isolate.
Makes 2 servings of a cup each.

Nutritional Info: 198 calories from 1.2g fat 34.5g carbs and 16g of protein

  • That sounds good - I might give it a whirl!
    Have you found any good recipes that include carrots? I’ve had store-bought ones before and they are quite good.
